This highly regarded beer is a classic "saison" beer by virtue of its strength and its earthy, aged quality. It has a hardy, semi-dry malt character, a fresh but not overpowering hoppiness, abundant yeast and fruit flavors and a fairly strong, but pleasantly enticing mustiness.

The Hill Farmstead brewers traveled to Brasserie de Blaugies to share the kindred bond of farmhouse brewing; the result is this classic spelt saison, made brighter by an abundance of Amarillo hops. Aromatic notes of fruit and spice lead to flavours of citrus and pepper, then to a finish that is clean and dry.

Saison D’Epeautre is made in a traditional style, using spelt and barley malts. The aroma is bright yet wonderfully musty and unmistakably Belgian. While the beer's hardy texture expresses the true character of the grains, a wheaty tartness and light body allow for a very dry finish.

Darbyste is a saison made with wheat and fermented with fig juice. Figs dominate the nose, with notes of raisin, pear and red grapes rounding things out; a tart, funky aroma offers intrigue. On the palate, the figs are not as evident; instead the flavour is light, lemony and dry with sweet undertones.
Imperial Stout w/ Coffee

A unique stout in all regards, Blidegarian is a departure for this family run farmhouse brewery. Rich, roasted malts dominate the nose with their sweet and smoky character. Fruity esters compliment the malt flavours while the use of coffee add to the pleasantly bitter finish.
